||Day Eighty-Two||
After completing my 8th day of Blogilates, I can say that I'm already noticing changes; not necessarily changes that I see in the mirror, or read on a scale, but changes that I can feel.
For example, the dress I wore to my cousin's wedding in July is the same dress (at least I'm 98% sure) that I'm wearing to my other cousin's wedding tomorrow. So, like any normal person, I tried it on last night to see how it looked, debated on what shoes to wear, what accessories, and I noticed that it fit a little less snug. It was nothing drastic, but it just felt more comfortable, and that made me happy.
Another way I've noticed my progress is by my appetite. I love food. A lot. I used to go to the pantry and see 5 different things that would instantly sound good to eat. And then I would eat them. All of them. So much to the point that I felt sick, full, and, ultimately, guilty. It took me a long time to even realize what I was doing -- I was binge eating. The binging became a habit, and it got to the point where I would try so hard to not snack, to not think about food, and to resist the urges, but they were always unsuccessful. But, now I can proudly say that I am on my way to eliminating my binging habit. By doing the Blogilates daily workouts, I don't feel as hungry in general anymore. In fact sometimes I don't feel hungry at all. Plus, after completing the workouts, it's been so much easier for me to deny myself certain foods such as cookies (what!), ice cream (no way!), SOME chocolate (seriously??), and even one of my all time favorite foods: pizza.
However, Blogilates is more than just a source of workouts, but it is also a source of recipes called "Cheap Clean Eats". Just as it sounds, all the recipes are "clean" versions of guilty pleasure foods. So, in keeping with my fairly healthy eating, I decided try the "Cheap Clean Eats" recipe for pizza -- a flourless pizza.

So to make this pizza flourless, you make a cauliflower crust. This is something that I have been wanting to try for so long. Basically you get a head of cauliflower, chop it up into a food processor until it looks kind of grainy (but it's soft like rice).
Then, you zap the ground up cauliflower in the microwave. Now, on the Blogilates recipe she says to microwave it for 8 minutes. And that's what I did. BUT my cauliflower burnt to a crisp, and it made the whole downstairs reek of burnt coffee/burnt popcorn. It was awful. So, the second time around I microwaved it for about 3 minute total, but in 1 minute intervals. Next, mix the hot cauliflower with an egg and some cheese, then form a crust.
After baking the crust for a bit to kind of set it, you treat it like any other pizza. Load it up with sauce, toppings, and, of course, cheese.
For toppings I used: green onion, green pepper, green olives, and black olives.
If I were to make this again, however, I'd probably put a little bit of pepperoni on it, just for another dimension of flavor. I love veggies, but I think I love pepperoni more.

Also, on the recipe, she uses plain mozzarella cheese, but I got a "Pizza" blend (mozzarella, parmesan, and romano) which I think was a delicious call.
A little more time in the oven, and here is the finished product!
Honestly, the size of the pizza was probably what most people would consider a "personal pan" pizza, but eating half was enough for me.
The verdict: If you're jonesing for some pizza, have some time on your hands, and want to not feel guilty about it -- this pizza is perfect!
On my pizza, the crust was a little soft. However, I think that can be attributed to either not cooking it long enough (before all the toppings), or due to the fact that maybe I didn't use enough cauliflower so the egg kind of took over (after my first failed attempt at microwaving the cauliflower, I just kind of eye-balled the measurements). But overall I think this was a successful dish!
It takes some time, but so does ordering a pizza.
